Pumpkin Oat Muffins Recipe (Weight Watchers Friendly)

For Thanksgiving and New Year's I've been using a Weight Watchers recipe to make a healthier dessert. This recipe is for a Pumpkin Oat Bread but I adjusted it a little to be more portion and taste friendly. This recipe isn't mine, I just made a few small changes. I added raisins to the recipe and they work great with the pumpkin/cinnamon flavor. These muffins are easy to make and they come out great. I've gotten lots of compliments on them and they are fairly low in PointsPlus values!

You will need:

-Cooking spray (I used Pam)
-1/2 cup unsalted butter (softened in microwave for 15-20 seconds)
-1 1/2 cups light brown sugar
-3 large eggs (beaten)
-2 cups canned pumpkin (if you get a 16 oz. can, you can add in the whole can without measuring)
-1/4 teaspoon table salt
-1 teaspoon pumpkin spice
-1/2 teaspoon cinnamon
-1 1/2 cup all purpose flour
-1 1/2 cup uncooked quick oats
-2 1/2 teaspoon baking soda
-1 cup raisins
-Sliced almonds


  • Preheat oven to 350ºF. Coat muffin form pan with cooking spray (not just the bottom, around the sides of the form too)
  • Using an electric mixer, in a large bowl, cream butter and sugar until light and fluffy. Add eggs and pumpkin; beat well. Add salt, pumpkin pie spice, cinnamon, flour, oats, raisins and baking soda; mix thoroughly. Add two teaspoons of batter in each form slot. Add sliced almonds on top of muffins. Bake until a toothpick inserted in center of muffin comes out clean, about 40 to 45 minutes.



This yields 24 muffins, each muffin is 4 PointsPlus. Enjoy!
